Oven Baked Mutancana Recipe

Mutancana is a delicious recipe from the Ottoman cuisine and we made its oven baked version recipe. It somewhat resembles hunt dishes. Considering the hunting parties of the Ottoman dynasties, this is not very surprising. My spouse and I tweaked the recipe a bit. In our opinion, oven baked version recipe it turned out quite nice. For the recipe, instead of buying and chopping dried fruits individually, I bought a ready-mixed pack of chopped dried fruits. I think it was easier this way. Here is our recipe:

  • 1/2 kilo lamb loin chops
  • 200g mixed dried fruits
  • 1/2 cup raw almonds
  • 2 tablespoons butter
  • 6 pearl onions
  • 1 tablespoon honey
  • salt
  • black pepper
  • sumac

Soak the dried fruits in hot water for half an hour and then strain. Meanwhile, sear the whole piece of meat in a cast-iron pan. In another pan, melt the butter and sauté the onions. Then add a little water and all the other ingredients and cook. Place the meat and the other ingredients into an oven bag and cook in an oven preheated to 200 degrees Celsius. After half an hour, remove the ingredients from the oven bag, mix them into the meat by turning everything over, and continue to cook in the oven until done.
